Katie's Note

This praline was born in Lisbon! During a family trip to Belém, I couldn't stop eating Pastéis de Nata from the famous bakery. I spent weeks trying to capture that exact combination of burnt custard and cinnamon in chocolate form. The trick is real egg custard in the ganache and a quick torch on top — just like they do at the pastelaria.
