Chocolate de Nata
Inspired by the iconic Pastel de Nata of Lisbon. A crisp dark chocolate shell with a caramelised brûlée top conceals a silky vanilla custard ganache layered with cinnamon.
Origin
Belém, Lisbon
Portugal
Tasting Notes
Glossy dark chocolate dome with a torch-caramelised golden-brown brûlée crown
Warm vanilla custard, toasted sugar, Ceylon cinnamon, hint of nutmeg
Opening of bitter dark chocolate giving way to creamy vanilla custard. Mid-palate cinnamon warmth, finishing with caramelised sugar and a whisper of lemon zest — exactly like biting into a warm Pastel de Nata
The thin chocolate shell gives a satisfying snap, melting into the impossibly smooth custard ganache. The brûlée layer adds a delicate crunch
Long, warm and comforting. Lingering vanilla and cinnamon, like the memory of a Lisbon afternoon in Belém

Katie's Note
“This praline was born in Lisbon! During a family trip to Belém, I couldn't stop eating Pastéis de Nata from the famous bakery. I spent weeks trying to capture that exact combination of burnt custard and cinnamon in chocolate form. The trick is real egg custard in the ganache and a quick torch on top — just like they do at the pastelaria.”
